How to make an Amaretto Sour· 4 min
- 1Add the amaretto, lemon juice, simple syrup and egg white to a shaker without ice.
- 2Dry shake hard for 10 seconds to whip the egg white.
- 3Add ice and shake again for 10–15 seconds until well chilled.
- 4Strain into a rocks glass over fresh ice.
- 5Garnish with a cherry and a lemon wheel.
Bartender tip: Add 15 ml of bourbon to the shaker for a less sweet, more structured sour — a trick popularised by Portland bartender Jeffrey Morgenthaler.
